A simple and nutritious breakfast on the go! Blueberry Smoothie Chia Pudding combines two of our favorite breakfasts into one.
Can you believe it’s almost August? More than half the year gone, and it seems to us to have gone by in a blink! Hope you’re having a great summer where you are.
I have complained before that the summer in Slovenia this year is a bit lousy. It barely touches 30°C (86°F) on a few days. The mornings are often cold, dewy and foggy. Autumn like.
Good thing there is bright summer food to keep our spirits up.
We have a couple favorite breakfasts that we rotate on a regular basis, such as chia pudding and a fruit smoothie.
But when you combine the two, you get this delightful Blueberry Smoothie Chia Pudding that looks stunning and tastes absolutely delicious!
To make this breakfast just pre-soak chia seeds the night before in plant-based milk, then in the morning blend together with a banana and some blueberries, add a spoon of granola and you’re done!
You can also pack this Blueberry Smoothie Chia Pudding to go for a healthy and easy breakfast or mid-morning snack.
Blueberry Smoothie Chia Pudding {Vegan}
A simple and nutritious breakfast on the go! Blueberry Smoothie Chia Pudding combines two of our favorite breakfasts into one.
Ingredients
- 30 grams (2 tbs) chia seeds
- 1 cup plant-based milk
- a drop of vanilla extract
- 1 ts agave syrup
- 1 small banana
- 1/2 cup blueberries (fresh or frozen)
- 2 tbs granola
Instructions
- Prepare the chia seeds the night before by mixing together chia seeds, plant-based milk, vanilla extract and agave syrup in a jar, close the lid and refrigerate overnight.
- In the morning, place in blender the banana, blueberries and soaked chia seeds and blend until smooth.
- In jars or glasses, place a tablespoon of granola in each jar, pour over the blueberry smoothie chia pudding and top with fresh or frozen berries. Optionally add a tablespoon of plant-based yogurt and serve.
Notes
To make the recipe we used products from Hofer, specifically: Natur aktiv bio soya drink, Natur aktiv bio chia seeds, Natur aktiv bio agave syrup, Natur aktiv bio knusper muesli (raspberry and dark chocolate).
