Cucumber Lime Mocktail is a refreshing non-alcoholic Summer mocktail made with cucumbers, lime, and carbonated mineral water.
We blinked, and Summer is already coming to a close. The mornings are cold and foggy, and the days are getting shorter and shorter. We are blessed these days that the mid-day is still very much sunny and warm, and we’ve been taking 15 minutes each day at lunchtime, to eat lunch in our backyard, soaking up the sun to increase our vitamin D for the upcoming winter months.
We started craving soups, stews, apples, and cinnamon in the mornings and evenings, but the hot mid-day temperatures still call for ice-cold, refreshing drinks.
This Summer has been the Summer of cucumbers, as apparently it grew really well. Not in our garden, though, but we did get it enough from the parents, to have it to spare.
And as wasting food is not an option, I juiced the cucumbers and mixed them up in delicious and refreshing mocktails!
Making this Cucumber Lime Mocktail is really easy and fast. You will need a blender (or a juicer if you have it!) and a fine strainer.
You start by dicing up the cucumber – I peel mine, but this step is totally optional. Add the diced cucumbers to your blender (or juicer) along with water, lime juice, mint leaves, salt, and maple syrup. Blend it all up, then run it through a strainer to remove any seeds or fibrous bits.
Then, pour the juice in a jar or pitcher, and add in carbonated mineral water and ice cubes. Mix well and serve!
I like to serve this Cucumber Lime Mocktail with a long slice of cucumber, that I just press into the sides of the glasses. It makes for a really pretty sight! Then, I add in also a lime wedge, some more ice cubes, and a sprig of mint.
Perfect for sipping in the late-summer afternoon, sunbathing, and reading a book or two.

Cucumber Lime Mocktail is a refreshing non-alcoholic Summer mocktail made with cucumbers, lime, and carbonated mineral water.
Ingredients
- 1 large cucumber
- 1 cup of water
- 2 limes
- 3 tbsp mint leaves
- 2 tbsp maple syrup
- pinch of salt
- 1 cup carbonated mineral water
- 2 cups of ice cubes (or more as needed)
Instructions
- Peel and dice 1 large cucumber, then add to a high-speed blender.
- To the blender Add 1 cup of water, juice of 2 limes, 3 tbsp mint leaves (adjust to your taste), 2 tbsp maple syrup, and a pinch of salt. Blend until smooth.
- Strain the cucumber juice through a fine strainer or cheesecloth into a jar.
- To the jar, add 1 cup carbonated mineral water and 2 cups of ice cubes (you can add more ice cubes if you like).
- Serve in glasses with ice cubes. For decoration, you can add some cucumber slices, a lime wedge and some more mint.
